GF Double Chocolate Zucchini Muffins

Our Hearthy Cacao Flour is packed full of iron, magnesium and heart healthy properties. May help regulate heartbeat, blood pressure and reduce blood sugar levels. This recipe contains no white flour and no added oil but is rich in fiber from the almond butter and cacao. The high fiber and protein content from the almond butter, eggs and cacao flour makes this muffin feel fuller, longer. Zucchini not only adds natural moisture but fiber and potassium to help maintain healthy blood circulation. So even though these muffins taste so guilty they are actually extremely healthy!
Gf Double Chocolate Zucchini Muffins
Makes 12 Large Muffins
Ingredients
1/4 cup Hearthy Cacao Flour
1 cup of Shredded Zucchini Packed
1 cup Raw Almond Butter
¾ cup Coconut Palm Sugar
2 eggs
½ tsp Baking Soda
¼ tsp Salt
1 tsp Vanilla Powder
½ cup Mini Chocolate Chips + ¼ cup for Topping (Optional)
Preparation
Preheat oven to 350 F degrees
Take 1 cup of shredded zucchini and squeeze out as much moisture as possible before using.
In a large mixing bowl place all of the ingredients and mix until well combined.
Line a large muffin tin with paper cups or grease each well. Scoop one heaping scoop or about ¼ cup of batter into each tin. Place in the oven for 25+ minutes or until the toothpick comes out clean. Allow the muffins to cool down for 10 minutes before serving.
