—- Filling Ingredients:
• 4 medium Apples ( peeled , cored , sliced , I used a mix of 2 Granny Smith & 2 Gala Apples )
• 1/4 cup Coconut Sugar
• 1 tablespoon Tapioca Flour
• 1/2 teaspoon Cinnamon powder
• Juice from 1/2 Lemon
—- Streusel Ingredients:
• 3/4 cup Gluten Free Rolled Oats
• 1/2 cup Rice Flour
• 1/3 cup Apple Flour
• 1/2 cup Coconut Sugar
• 1/2 teaspoon Cinnamon powder
• 1/4 teaspoon Nutmeg powder
• 1/4 teaspoon Salt
• 1/2 cup softened butter or Ghee
• 1/2 cup Pecan pieces
—- Directions:
• Preheat oven to 350 degrees ; lightly grease a 9” square pan or round baking dish.
• In a large bowl , combine all filling ingredients until mixed well ; set aside.
• In another bowl , combine the streusel ingredients ; make sure you incorporate the butter / ghee really well and then add the pecans at the end .
• Spoon filling mixture into pan ; top off with streusel topping .
• Bake at 350 for 40 minutes until golden brown . Enjoy with a scoop of vanilla ice cream and caramel.
