I’ve got a cake pop recipe for when you’re in a time crunch! It requires no oven and no eggs! Just a microwave and a stove (for melting chocolate). Let’s get right into it!

Microwave Cake Pops Recipe Hijabs and Aprons

INGREDIENTS

  • 62g (1/2 cup) all-purpose flour, sifted

  • 10g (1/4 cup) cocoa powder, sifted

  • 25g (3 tbsp) brown sugar

  • 1/2 tsp baking powder

  • a pinch of salt

  • 25mL (~ 1/4 cup) vegetable oil

  • 190mL (1/2 cup) + 1 tsp whole milk

  • 1/2 cup + 1/4 cup (separated) semi sweet chocolate chips

RECIPE

  1. In a mixing bowl, whisk together the dry ingredients.

  2. Add the oil and 1/2 cup of milk to the bowl and stir until fully incorporated.

  3. When the batter is smooth, pour it into a wide Pyrex bowl like this one. Microwave on high for 2-3 minutes, until a toothpick inserted into the center comes out clean. For reference, it took mine 2:15.

  4. Transfer the cake to a bowl in which you can crumble the cake with a fork.

  5. Melt the 1/4 cup of semi sweet chocolate chips with 1 tsp of milk and whip it into a smooth paste. Mix this into the crumbled cake.

  6. Form the balls by mushing and squeezing the cake (about 2-3 cookie scoops’ worth) between your palms. Don’t roll, it might crumble!

  7. Melt 1/2 cup semi sweet chocolate chips in a double boiler. Do NOT mix any liquid into this or else it won’t set after we dip!

  8. Stick the lollipop sticks into the cake balls. Dip and swirl them carefully in the melted chocolate. Alternatively, use a spoon to pour the chocolate over top of the cake pops.

  9. Decorate as you wish! Pour sprinkles over top or dip the entire pop into the sprinkles. Gently pat some edible silver leaf to jazz it up!

  10. Pop them into the fridge to fully set.
