Savory Mushroom Oatmeal By Abeer Najjar

- Ingredients:
- 1 garlic clove, chopped
- 1/2 cup sliced mushrooms
- 2 cup water
- 2 tbls soy sauce
- 1 tsp sesame oil
- 2 tbls chicken broth powder
- 1/4 cup steel cut oatmeal
- olive oil or butter
- salt & pepper
- Toppings (optional):
- chopped cilantro
- sliced green onion
- chopped walnuts
- mushrooms
- boiled egg
- furikake seasoning
In a deep medium-sized pan on medium/high heat, warm 2-3 tablespoons of olive oil or butter. Sauté the garlic and mushrooms in the olive oil for 3-5 minutes until the mushrooms are browned and tender. Place a few mushrooms aside for garnish later. Add the water, soy sauce, sesame oil, chicken broth powder, salt and pepper. Bring the broth to a boil.
Add the oatmeal to the boiling broth and reduce to low heat. Allow the oatmeal to simmer for 10-12 minutes until the oats are cooked through and it has a porridge like texture.
Plate the oatmeal in a deep bowl and garnish with any desired toppings. Serve warm.
