Gluten-Free Chicken n’ Waffles with Spicy Maple Butter Syrup
Who doesn’t want Chicken n’ Waffles without the guilt? We took this delicious breakfast item and turned it into an all gluten free option! We bumped up the protein again with our Hearthy Collagen and replaced regular AP flour with our Hearthy GF AP Flour. Our waffles came out fluffy and light with nice vanilla and a hint of coconut flavor in the background.
GF Chicken n’ Waffles with Spicy Maple Butter Syrup
Air Fryer Chicken Ingredients
1 pound boneless chicken tenders
1 cup of Almond or Oat milk with 1 tsp of Salt and ½ tsp pepper
Seasoned Flour coating for Chicken
½ cup Hearthy AP GF Flour or Hearthy Red Lentil Flour
1 cup Milk Alternative or Milk
½ tsp Himalayan Salt
½ tsp Paprika
½ tsp Garlic Powder
¼ tsp Onion Salt
¼ tsp thyme
¼ tsp Turmeric
⅛ tsp Black Pepper
⅛ tsp Cayenne Pepper
In a bowl, add one cup of milk or milk alternative with salt n’ pepper, stir. Place boneless chicken tenders to soak. This can be done a day ahead of time, if not soak chicken for at least an hour in the refrigerator.
Preheat the airfryer, using the air fry setting.
To prepare flour coating for chicken, in a shallow bowl add Hearthy AP GF flour and all the spices. Whisk together. Remove soaked chicken tenders one by one and coat in flour mixture. Once all tenders have been coated, place in a preheated Airfryer. Optional, is to lightly spray the top of the chicken with oil. Our air fryer had a 17 minute setting. At the halfway mark check the temp of chicken. We are looking for 165 degrees. Once chicken is cooked, it’s ready to be plated on top of waffles and drizzling with spicy maple buttery syrup!
High protein GF Waffles
Dry Ingredients
1 cup Hearthy Almond Flour (28 grams of protein)
4 T or 25g Hearthy Collagen Powder (21g of protein)
1 tsp Stevia
1 tsp Vanilla powder
1 tsp Baking Powder
1 tsp Xanthan Gum
⅛ tsp Salt
Wet Ingredients:
2 eggs (12 grams of protein)
½ cup Almond Milk (or Liquid of Choice)
¼ cup Coconut Oil (melted)
In a mixing bowl add all dry ingredients and mix; Almond Flour, Collagen Powder, Coconut Flour, Stevia, Vanilla Powder, Baking Powder, Xanthan Gum & Salt. In another bowl mix wet ingredients; eggs, milk and oil. Slowly add the dry ingredients into the wet ingredients and mix. The batter will be thick, not runny like traditional waffles. We used a 4 oz scoop and made 8 mini waffles. Heat waffle iron and spray oil if required. Cook until desired doneness. Once waffles are done they are ready to eat!
Chicken n Waffle Spicy Maple Sauce Recipe- To drizzle
2T Butter or Vegan Butter
½ cup Maple Syrup
¼ tsp Cayenne Pepper (Optional ½ tsp Spicier)
¼ tsp Paprika
In a small skillet place all ingredients together and warm until well combined. Syrup is ready to drizzle over your chicken and waffles.
