Coconut Milk Pudding- Vegan, Gluten Free and to Die For

Coconut Milk Pudding

A creamy, dairy-free pudding with a hint of vanilla and coconut.

Ingredients:

  • 1 can (14 oz) coconut milk
  • 1/2 cup water
  • 1 tbsp agar agar powder
  • 3-4 tbsp sugar (adjust to taste)
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. In a saucepan, combine coconut milk, water, sugar, and agar agar powder.
  2. Bring to a boil over medium heat, stirring to dissolve the agar agar.
  3. Simmer for 1-2 minutes, then add vanilla extract if using.
  4. Pour into molds or cups and let it cool at room temperature for a few minutes, then refrigerate until set.
  5. Serve chilled, garnished with fresh fruit or shredded coconut.
